Sweet and Sticky Soy Pork Bites

Ingredients
  

  • 1 pork tenderloin (cut into 1" pieces)
  • 2 Tbsps olive oil
  • 1 tsp fresh ginger (peeled and shredded)
  • 2 garlic cloves (shredded)
  • 1/4 cup honey
  • 2 Tbsps soy sauce
  • 1 tsp sesame oil
  • 1 tsp chilli oil
  • 1 Tbsp rice wine vinegar
  • salt and pepper (to taste)

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat. Salt and pepper the pork tenderloin pieces, and sauté until they have been browned. Set aside.
  2. Whisk together the rest of the ingredients and add to the pan. Cook for approximately 4 minutes, allowing the sauce to reduce.
  3. Add the pork back to the pan, and stir, allowing the sauce to reduce further and stick to the pork pieces. Cook for another 3-4 minutes, then remove from heat and serve.
